Nothing better than local honey!

I know what you’re thinking, these don’t look like your everyday scones. True! They are gluten-free and refined sugar-free. I know, I know, but how can a scone be delicious without gluten + sugar? Well, you’ll have to make them and find out, ha!

But really, these turned out to be so yummy and honestly, it’s hands down the lemon honey butter I whipped up that really makes these scones extra delish. I used The Heritage Bee Company’s Triple Lemon Creamed Honey to make them. The flavour with this honey is next level! I could totally eat it from the jar, which I did.

The Heritage Bee Company is located in Ontario and has a few certifications under their belt. They are Certified B Corporation, Certified Naturally Grown and Certified Bee Friendly Farming. Amazing! Their beekeeping approach is unique and sustainable. They have a whole page on their website dedicated to their approach (click here to read it), which was such a joy to read. I love learning about local businesses and how they operate.

These Lemon Blueberry Scones go perfectly with their Triple Lemon Creamed Honey, trust me, you’ll be licking your fingers with this stuff! See how I made everything below.

Blueberry Lemon Scones

Print Recipe
Prep Time:15 minutes mins
Cook Time:25 minutes mins
Total Time:40 minutes mins

Ingredients

  • 1 cup fine almond flour
  • ¼ cup coconut flour
  • 2 tablespoons coconut sugar
  • ½ teaspoon baking soda
  • Pinch of sea salt
  • Zest of 1 lemon
  • 1 egg
  • ⅓ cup almond milk
  • 1 ½ teaspoon pure vanilla extract
  • Juice of 1 lemon
  • ¼ cup melted coconut oil make sure it’s cooled a bit before adding to wet ingredients
  • 1 cup fresh blueberries
  • 2 heaping tablespoons Heritage Bee Company Triple Lemon Creamed Honey
  • ¼ cup room temperature grass-fed butter

Instructions

  • Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, add the almond flour, coconut flour, coconut sugar, baking soda, sea salt, lemon zest and mix to combine.
  • In a small bowl, add the egg, almond milk, vanilla, lemon juice, coconut oil and mix to combine.
  • Add the wet ingredients to the dry ingredients and mix until everything is well combined and a dough forms. If it is too wet, add a bit more coconut flour.
  • Fold in the blueberries.
  • Give it a taste and adjust flavour if needed. If you want more lemon, add more. If you want it to be sweeter, add another tablespoon of coconut sugar.
  • Now comes the fun part, shaping your scones! Take your dough and shape it into a big round ball (like you are making pizza dough). Place it on top of the baking sheet and start to press it down. What you want is the shape of a disk about 1 inch thick. Carefully cut the scones into 8 pieces like a pizza pie, and if you can, separate them about 1 inch a part. You can shape them any way you like. You can make them more rounded or just leave them as is. They might fall apart a bit, but that’s ok! Just reshape them before putting them in the oven.
  • Bake for 22-25 minutes on the middle rack of your oven. It really depends on your oven and how you want them cooked. I baked mine for 23 minutes.
  • In a mixing bowl, add the butter and the honey and mix with a hand mixer until nice and whipped! Add to a serving bowl and add some lemon zest, if you would like.
  • Slather onto the scones and enjoy!

PINEAPPLE BLOOD ORANGE MOCKTAIL 🍍🍊 How bea PINEAPPLE BLOOD ORANGE MOCKTAIL 🍍🍊 

How beautiful are blood oranges? 😍

I’ve been playing around with mocktails and I think this might be one of my faves! 

Here’s the how to:

1/2 cup pineapple chunks
Juice of 2 blood oranges
1-2 tsps raw honey
1/2 cup coconut milk
Sparkling water
Ice

In a glass or cocktail shaker, add the pineapple, blood orange juice and honey. Muddle until the pineapple is mashed.

Pour in the coconut milk and stir. With a fine mesh sieve or strainer, place on top of a glass and pour about half of the pineapple mixture into it and use a spoon to get the juices out. Repeat with another glass.

Add ice to the glass and top with sparkling water. Garnish with a slice of blood orange. 

Enjoy! 💛 

* you can add a pinch of sea salt
* you can eat the muddled fruit or add a tsp or 2 to your drink!
* use pineapple juice if you prefer

I mean…look at this baking section at @naturescanada 😍 They literally have ALL you need for all lifestyles. Whether you’re gluten-free, dairy-free or just looking for some healthier options, they have you covered! 

Extracts: Look for extracts with no artificial flavours or colours

Flours - These are some of my favs: cassava, coconut, almond, spelt and a gluten-free blend. I like to use rolled oats a lot too and you can make your own oat flour with them.

Chocolate - I use cacao powder, allergen friendly chocolate chips and chocolate bars (broken up into chunks).

Fats - Grass-fed butter (salted or unsalted) and coconut oil.

Eggs - locally sourced goodness! 🤗

Sweeteners - Maple syrup, honey, cane sugar and coconut sugar. 

Liquids - I like to use unsweetened coconut milk from a carton or can.

And just for fun, marshmallows! 🤭

Remember, it’s not about being perfect. It’s about making better choices and ENJOYING life! ❤️

Ok ok this one is definitely a favourite for me! 👩🏻‍🍳

Let’s take a moment to appreciate the spices section @naturescanada 😍 I mean, what don’t they have? Having so many amazing options to choose from makes me feel confident I’m making healthy choices for me and my fam. 🤗 

So let’s dive right in.

Cooking oils - I know this is a hot topic but these are the things I cook with. Greeks (like me lol) have been using olive oil forevvveeerrr so I’m going to also use it foreva because it’s a part of my culture. 😉 Avocado oil, coconut oil, grass-fed butter and ghee. When buying olive oil and avocado oil, look for darker glass bottles to prevent oxidation. Also, don’t be afraid of butter! 🤗 Grass-fed butter is packed with healthy fats and fat soluble vitamins. Ghee is great too. Ghee is made by melting butter. It gets separated into liquid fats and milk solids. The milk solids get removed and then voila you have ghee! 

I personally don’t buy vegetable oils like canola, sunflower oil, etc. They are highly refined and processed and just no bueno for me. 🙅🏻‍♀️

Spices - make sure to read labels! You would I be surprised at what gets added to spices. If you’re buying dried dill, the ingredients should just be dill. 

Salt - same thing as spices…there should only be salt as the ingredient no fillers or any other nonsense! I’m a big fan of @redmondrealsalt !
